creamy cucumber + corn chicken salad

Fresh, flavorful, and easy to throw together, I’ve been making this on repeat lately. It’s packed with fresh ingredients, comes together quickly, and is one of the few meals I actually enjoy eating as leftovers. If you’re looking for an easy lunch to keep in the fridge for a few days, this is it.

Ingredients

  • 2 cups (grilled) chicken

  • 1 cup sweet corn

  • 1 large cucumber

  • red onion

  • ½ cup mayo

  • 2 Tbsp greek yogurt

  • 1 Tbsp lime juice

  • cilantro

  • 1 tsp smoked paprika

  • salt

  • black pepper

  • crumbled feta

Instructions

  • Prepare the chicken. I prefer to grill. You could also buy precooked/rotisserie chicken. Then once it is cooked either dice or shred it.

  • Chop the cucumber and red onion.

  • In a large bowl combine mayo, greek yogurt, lime, paprika, salt, and pepper for the sauce.

  • Mix the chicken, cucumber, and corn with the sauce and combine until it’s all evenly coated.

  • Add the cilantro and top with feta cheese.
